Nice Protein Waffles

Protein waffles topped with light maple syrup and blueberries

Sooo we have been in a pandemic for what seems like a lifetime at this point, and like everyone here, you might have put on a few extra pounds. There is absolutely nothing wrong with that! Some comfort food has definitely gotten folks through some rough days! That being said, if you are wanting to get back in the swing of things, and shred some Covid weight, these NICE Protein Waffles could easily become a staple in your daily rotation. They are super easy to make, high in protein, AND they taste fantastic! Losing weight has never tasted so good 😊

INGREDIENTS
  • 185 grams egg whites
  • 62 grams of protein powder of choice (vanilla recommended)
  • 110 grams unsweetened apple sauce
  • 15 grams of coconut flour (or flour of choice)
  • 4 grams baking soda
  • Cinnamon
  • Blueberries
  • Sugar-free syrup
  • Fat-free Greek yogurt
DIRECTIONS
  1. Heat waffle maker until temperature indicator is green (ready to go).
  2. Grab a mixing bowl and food scale. Weigh out the ingredients as you add them to the bowl. Clear the weight in between each ingredient to get an accurate reading.
  3. Add in the egg whites, protein powder, unsweetened apple sauce, coconut flour and baking soda into the bowl.
  4. Mix ingredients together until smooth.
  5. Spray the top and bottom waffle trays with cooking spray. This will help the waffles separate from the grill and give them a nice crispy texture.
  6. Pour batter onto the waffle maker from the outside in towards the center, and close waffle maker.
  7. Serve with blueberries and sugar-free syrup on top! You could also mix some protein powder into some fat-free Greek yogurt for some extra protein and yum.
  8. Enjoy!
