Nice “Quiche” Bites

Quiche egg bites

Eggs are truly a gift given to humankind from the heavens! Not only are they loaded with protein, healthy fats, and vitamins… they also taste FANTASTIC! So why add in those extra calories with crust when you can make egg bites that are bursting with flavour? Bite-size also means you can have more than one… and trust me, you will at least want two! Do your body and mouth a favour, and try out this delicious nice “quiche” option. We promise you’ll be eating nice but feeling naughty 😉


INGREDIENTS
  • 4 large eggs
  • 4 egg whites or approx 120g
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 1/2 lb white mushrooms, thinly sliced
  • A hand full of spinach
  • 60g low-fat cheese of choice
  • Sprinkle of garlic powder
  • Salt and freshly groud pepper to taste
DIRECTIONS
  1. Preheat your oven to 350°F and grease a muffin pan with preferred cooking spray.
  2. Whisk together the eggs and egg whites in a mixing bowl or large measuring cup. Mix until everything is yolk yellow. Set it to the side for later.
  3. Heat a non-stick pan (grease if needed) over medium heat.
  4. Once heated add in your chopped red and green pepper. Saute for about 5 minutes (peppers should be tender).
  5. Sprinkle in some garlic powder as you stir for some added flavour.
  6. Add in the mushrooms and spinach. Let everything cook for 2–3 minutes (stir as needed).
  7. In the last 30 seconds add in the low-fat cheese (no one wants burnt cheese).
  8. Once the cooked vegetables are prepped, pour them into the whisked egg and egg whites you prepared earlier. Give it a quick mixing! (You should have enough to fill a 12 cup muffin pan.)
  9. Fill each cup up evenly (about halfway in each cup).
  10. Put the muffin pan into the oven for 15 minutes or until the tops of the bites are firm. They will turn golden when ready, but if you want to check to make sure – the toothpick test works perfectly!
  11. Once the bites are finished baking, take the pan out of the oven and let cool for about 5 minutes. You can serve immediately or let them cool right down for meal prep! These tasty egg bites make great high-protein snacks or breakfasts throughout the week. Enjoy!

Tip: Personalize it! Feel free to use as many veggies as you’d like!
