Naughty Nacho Bowl

They’re crunchy, crispy, zesty, you name it! Nachos are one of those guilty pleasure foods that have always been a staple on late-night bar nights, big game celebrations, or even a good “it’s been a hell of a week” Friday night treat. In times of needing comfort, this easy-to-make loaded nacho bowl will do just the trick. Saying that this dish is loaded would be putting it lightly! Between the juicy shredded bbq chicken, the delicious fresh guacamole, and the choice of Zesty Doritos for the chips, this pile of yum is sure to help you forget all those long, uninformative Zoom meetings you’ve had all week, and it would be the perfect “snack” to share with that special someone, but be warned you may want to make two 😉 


INGREDIENTS
  • 1 chicken breast (cooked and shredded)
  • 1 tbsp of BBQ sauce of choice
  • 1 cup of chopped/shredded iceberg lettuce
  • 1 cup of salsa of choice
  •  Bowl of Zesty Doritos
  • 120 grams of shredded cheddar cheese
  • 60 grams of sour cream
  • 1 avocado
  • 1 pinch of ground cayenne pepper
  • 1 tbsp of lime juice
  • 1 tsp of salt
DIRECTIONS
  1. Preheat your oven to 400°F. Grab a cooking tray and line it with aluminum foil.
  2. Place the chicken on your tray and glaze the breast with your choice of BBQ sauce.
  3. Once the oven is preheated, place it in the oven for 22–26 minutes. While the chicken is cooking you can prepare the other toppings.
  4. Pour the Zesty Doritos into a bowl (you can also use any tortilla-style chips you’d like). Place that off to the side for later. 
  5. Using a food scale measure out 120 grams of cheddar cheese, then shred and place it off to the side. 
  6. Chop up about a cup of iceberg lettuce and also put it off to the side. 
  7. Put the avocado into a medium-size bowl. Add in the lime juice, salt, and cayenne pepper, and then mash it all together to make your guacamole. Put that off to the side for later.
  8. Once the chicken is done baking in the oven, take it out and let it cool for a few minutes before slicing it up.
  9. Now it’s time to prepare your dish. Grab your Dorito bowl and pour your lettuce, salsa, and sour cream on top. Next, put the chicken and then sprinkle your cheese over top. The cheese should melt from the heat of the chicken. Lastly, scoop out your fresh guacamole on the top. Kick up your feet, put on your favourite Netflix show and enjoy!
