Seafood is a great option for anyone looking to cut back their caloric intake, while still managing to add in some protein and good Omega-3s into their diet. Lighter flavours and meals, such as seafood, tend to be more palatable during those hotter summer days as well. So why not give this nice baked cod recipe a try? Not only is cod an easy fish to cook with, but can be flavoured in so many ways! In this take, it’s paired with tomatoes and fresh thyme. Not a fan of tomatoes? Swap in any quick-roasting veggie like zucchini, red bell pepper, or onion. Feeling extra peckish? Oven roast some fingerling potatoes beside for a healthier fish and chips spread 😊


INGREDIENTS
  • 4 cod filets, about 1″ thick each
  • Salt and pepper for seasoning
  • 4 tbsp extra-virgin olive oil, plus more for baking dish
  • 1 cup cherry tomatoes
  • 1 sliced lemon, plus more for garnish
  • 2 garlic cloves, smashed
  • 2 sprigs thyme
  • 2 tbsp freshly chopped parsley for garnish
DIRECTIONS
  1. Using paper towels, pat cod filets dry, and season with salt and pepper. Preheat oven to 400Β° C.
  2. In a 9”-x-13” baking dish, combine olive oil, cherry tomatoes, lemon slices, garlic, and thyme.
  3. Toss to coat all ingredients and spread into an even layer, then nestle cod pieces into baking dish.
  4. Depending on thickness of filets, bake fish for 15–20 minutes, or until opaque and flakes easily with a fork.
  5. Garnish with parsley, extra lemon juice, and pan sauce. Serve and enjoy!
