Fresh Basil Hummus

This is a simple and delicious way to put some of those fresh herbs to use from the balcony garden! Basil gives traditional hummus a whole new burst of flavour, and lemon adds a lightness that is perfect for summer entertaining. This recipe is sure to have your guests begging for more!

INGREDIENTS
  • 1 (19 oz) can chickpeas
  • 1-2 garlic cloves
  • 1/2 tsp sea salt
  • Juice of 1 lemon, plus 1 tsp of grated rind
  • 1 packed cup of fresh basil leaves
  • 1/4 cup olive oil

For Garnish

  • Sprig of fresh basil
  • Sesame seeds
DIRECTIONS
  1. In a food processor add drained and rinsed chickpeas along with garlic and process until combined.
  2. Add salt, lemon, basil and olive oil.
  3. Process for 1 minute, scraping down the sides periodically to ensure all ingredients are emulsified well.
  4. Garnish with a sprig of fresh basil and sesame seeds, and serve with your choice of flat bread, crackers, or raw vegetables.
