You can always go with the Mother’s Day classic brunch cocktail of a Mimosa, a blend of sparkling wine and orange juice. But if you’re looking to jazz it up a bit, why not bring sexy back with the fruity, fresh, and oh-so posh Pimm’s Cup?
Quintessentially British, and the official drink of Wimbledon, this punchy cocktail can be served with as many fruit garnishes as Carmen Miranda’s hat, but I like to keep my Pimm’s properly English in refined and simplistic style.

INGREDIENTS
- 3 cups chilled Pimm’s No. 1
- 3 cups ginger ale
- 1 English cucumber
- 1 bunch of mint
DIRECTIONS
- With a wide Y shaped vegetable peeler, strip the cucumber into thin slices.
- Add half the slices to a pitcher along with a handful of whole mint leaves.
- Pour the Pimm’s into the pitcher, lightly pressing on the cucumber and mint and let sit for 15 minutes.
- Add in the ginger ale, stirring gently to combine.
- Line glasses with strips of cucumber and fill with ice.
- Pour mixture into each glass and top with a fresh sprig of mint.
