Pear & Arugula Salad

Arugula is a delicious winter green that grows from late spring to early winter. It has a deep earthy, almost peppery flavour, and goes incredibly well with rich and sweet salad toppings. We think you’ll love it in this simple salad with pears for sweetness, walnuts for texture, and blue cheese for some creamy, salty goodness. It’s the perfect side or can be doubled to feature as a main.

INGREDIENTS
  • 100 grams of washed arugula
  • 1 fresh pear, chopped into bite-sized chunks
  • 1/2 blue cheese
  • 10 walnuts, roughly chopped

For Garnish

  • Salad dressing of choice
  • Sesame seeds
DIRECTIONS
  1. Wash and dry arugula before placing it into a large mixing bowl.
  2. Chop up one fresh pear and 1/2 cup of blue cheese into small bite-sized chunks and add them to the bowl.
  3. Roughly chop 10 walnuts and add those to the bowl as well.
  4. Drizzle in salad dressing of your choice; we recommend a balsamic-based dressing to compliment the flavours of this salad.
  5. Using tongs, carefully toss the salad until the dressing has dispersed through the salad. Taste to see if you’re satisfied with the amount of dressing and add a bit more in at a time until you’re happy.
  6. Serve in a large bowl and top with sesame seeds. Enjoy immediately!
