It’s common to make some dietary switches in January. While trying to eat healthier or limit your meat consumption is easy to do in the wintertime, trying to stick to a 100 km diet can prove a bit trickier during Ontario winters. One fruit that’s always in season and always local is apples, which is why they are the perfect star of our apple and hummus veggie wraps. Apples offer the right amount of sweetness and crunch, while the hummus and yogurt provide satiating protein and healthy fats. We know this will become a staple in your lunches and quick dinners!

INGREDIENTS
- 1 Tortilla or Roti wrap
- 2-3 Tbsp of your favourite flavour of Hummus
- 1/2 cup of fresh baby spinach
- 1/2 an Ontario Fresh Honeycrisp, Gala, or Fuji apple, cored, thinly sliced
- 1/2 cup of broccoli slaw
- 1 Tbsp plain yogurt
- 1 tsp lemon juice
- 1 tsp paprika
- Salt and pepper to taste
DIRECTIONS
- Core and chop half an Ontario Fresh Honeycrisp, Gala, or Fuji apple and slice it thinly before placing it into a bowl.
- Add broccoli slaw, yogurt, lemon juice, paprika, and salt and pepper to the bowl and toss until everything has been incorporated.
- Lay your tortilla or roti out and spread the hummus into the middle, top with the baby spinach.
- On top of the baby spinach, spread the apple-broccoli slaw.
- Fold the bottom and top edges over, rotate, and roll from the bottom, to create a tightly packed wrap.
- Pack in a reusable container for lunch or slice in half to eat immediately and enjoy that delicious apple crunch!
